For more than 20 years we have been traveling to the border region of North Caceres and Salamanca, in Extremadura, mid-western Spain. Here we discovered an indigenous olive variety called Manzanilla Cacereña. Here olives grow on old trees, spread out in a patient landscape. No intensive production, but space, peace and slowness. The oil from these olives has a characteristic and refined taste. From the best producers we have selected olive oil to bring with us to The Netherlands. With our very own brand.
La Manzanilla is named after the Manzanilla Cacereña olive. Our olive oil is cold pressed, has a full golden colour and has no perceptible sediments. Further on you can read about the taste and nutritional value of this olive oil. Naturally production takes place without the use of pesticides. We deliver to some top restaurant kitchens but we also want to make La Manzanilla available to private gourmets. La Manzanilla is bottled in 1L cans. So the olive oil remains well protected against oxidation under the influence of sunlight. You could keep it almost endlessly… If it wasn’t that tasty!
La Manzanilla, Pure Character, Pure Refinement.
Some 300 km west of Madrid, towards the Portugese border, is where the Manzanilla Cacereña grows. The region includes the Sierra de Gata, Las Hurdes and the borders into Salamanca province. This area of rolling hills, valleys and plains is a landscape full of temperament. Strong seasonal transformations render almost four different landscapes every year. It exits of finca’s, forests, agricultural fields, reservoirs, rivers and olive groves.
The ‘Manzanilla Cacereña’ is an olive variety that for centuries has flooded the South of Salamanca and North of Cáceres, hence it’s name. The trees are medium-sized and of great longevity with specimens of up to 500 or even 700 years. Very rustic, thriving in poor soils with excessive acidity, with great adaptation to both poor soils and cold areas thanks to its easy rooting. The blazing Extremadura sun in summer does the rest.
The balanced taste contains bitter and sweet with a touch of spicy pepper. Some claim it’s aromatic scent contains hints of green fruit and nuts, apple, tomato and ripe bananas. We’ll let you decide on that. Specially recommended for consumption in purées, cheeses, rawfood, salads, veggies and fish or - as part of a good Spanish breakfast - on toast.
In Manzanilla Cacereña we find Oleic Acid, a monounsaturated fatty acid of the omega9 series in concentrations between 78 and 80%. Oleic acid exerts a beneficial action on blood vessels reducing the risk of cardiovascular disease. Linoleic acids of the omega6 series are to been found up from 14% in Manzanilla Cacereña. And of all olive oils, this olive oil is the richest in tyrosol, a powerful polyphenolic antioxidant.
